Your barley, your malt, your spirit
More and more distilleries want a whisky, gin or genever in which every ingredient has an origin: a field, a farm, a harvest. Malt is often the missing link, because malting a few tonnes of barley is of no interest to the large malthouses.
That is precisely what we do. You grow your organic barley, or have it grown; we malt it in Anseremme, in 5-tonne batches, without fossil energy; you collect your malt with its analysis certificate. From field to cask, the story stays yours.
Why malt your own barley
Complete traceability
Your barley is malted on its own, in a drum that handles one batch at a time: no blending with other harvests. You can name the farm, the field and the year on your label, and prove it.
A kilning programme set with you
Gentle, low-temperature drying preserves the enzyme power your mash needs; a longer kilning brings toasted-bread notes for a richer profile. Every batch is analysed in our laboratory before it leaves.

As a guide, a 5-tonne batch of barley yields about 4 tonnes of malt, in the region of 1,500 litres of pure alcohol depending on your distillation yield: a single batch at craft-distillery scale. Your barley must be certified organic, like every cereal that enters our malthouse.
